Where wafer lines win or lose: the oven, the cream, the cut

A wafer line is built around a plate oven: batter is dosed between heated metal plates, baked for a tightly controlled time, and exits as crisp sheets. The sheets are stacked with cream layers, cooled, cut into wafers, and optionally chocolate-enrobed. The oven is the bottleneck of the line — if it is undersized, nothing downstream helps; if it is oversized, the cream and cutting can't keep up. Sizing it correctly is the single biggest engineering decision.

The variables that decide quality are batter rheology and dosing precision, plate temperature uniformity (a 5 °C gradient across the plate shows up as colour difference on the wafer), sheet flatness, cream viscosity vs spread temperature, and cutting precision. A practical pattern: the same line in summer and winter behaves differently — cream spreads slower when the workshop is cold, and operators tend to overheat the cream to compensate, which accelerates oil migration into the wafer and shortens shelf life.

Two buyer mistakes: skipping batter recipe development before commissioning (the oven will run, but the wafer will not be the wafer the marketing photo shows); and choosing a cream temperature target for a moderate climate when the actual workshop runs hot or cold — the line ends up undersized in heat exchangers exactly when production must keep up with seasonal demand.
