What makes a bar line work for muesli, protein, and fruit recipes

A bar line is essentially a slab former: syrup binder (sugar/glucose/honey/protein) is cooked, mixed with the dry phase (oats, nuts, seeds, dried fruit, inclusions), spread into a continuous slab on a belt, cooled, and cut into bars. The same architecture covers muesli bars, cereal bars, protein bars, and fruit bars — the difference is the binder rheology and the cooling profile, not the metalwork.

Process control variables are binder cooking temperature, binder-to-dry ratio, slab thickness, compaction pressure (gentle, not aggressive — protein bars crack if pressed too hard), cooling time and humidity, and knife geometry. A practical detail: sticky bars (honey-bound muesli) need different knife dressing than dense bars (protein), and the changeover between them is part of the line's daily cycle, not a once-a-year event.

Two common buyer mistakes: sizing for one recipe (e.g., classic muesli) and discovering on commissioning that the protein viscosity range is outside the syrup pump's operating window; and skipping a cooling buffer before cutting, then watching warm bars deform on the conveyor. A small cooling tunnel is cheaper than rejecting a shift of off-spec product.
